Camping meal ideas? up to 3 weeks!?

My husband, 17 month son and I are planning on going camping in a week and a half and are looking for some easy meal ideas, we are gonna be in a cab over camper so I have a fridge, small freexer and 3 burner stove, and the fire pit! We will be camping for up to 3 weeks, any ideas you have would be great! Thanks!
